On a rainy day, little says comfort like a warm loaf of banana bread fresh from the oven. The smell fills the house, making even the dreariest day just a little bit brighter. There is the added bonus of using up overripe bananas before they are unsalvageable. This moist, delicious treat is made even sweeter by pairing with a nice hot mug of coffee or tea for an instant spirit lifter.
2 cups flour
1 teaspoon baking soda
pinch of salt
1/3 cup oil
3/4 cup brown sugar
2 eggs
3 mashed, overripe bananas
1/2 teaspoon cinnamon
1 teaspoon maple extract
Mix all the ingredients together and pour into a greased 9×5″ loaf pan. Bake at 325° for 55 minutes or until a pick inserted in the center comes out clean. Enjoy!
If you do not have maple extract, you can use vanilla extract with delicious results.
