1 box rotini, prepared by package instructions

1 tablespoon extra virgin olive oil

1 pound hot Italian sausage

1 onion, diced

1 green bell pepper, diced

3 cloves garlic, minced

8 ounces button mushrooms, sliced

28 ounce can crushed tomatoes

Salt and pepper, to taste

1015 pieces pepperoni, cut into quarters

1 tablespoon oregano

3 ounce can sliced black olives

Mozzarella and Parmesan cheese, for serving

Instructions

Cook pasta according to package instructions.  In a large skillet, warm the olive oil over medium high heat.  Add the Italian sausage and cook through.  Add onion, bell pepper, mushrooms and garlic, and cook until the vegetables are just tender.   Lower the heat, and add in the crushed tomatoes, salt, pepper, pepperoni, oregano and black olives and simmer for 10-15 minutes.  In a large bowl, toss the pasta with the sauce.  Serve with shredded mozzarella and parmesan cheese.  Enjoy!
