pumpkin chocolate chip waffles

My family loves fall and winter with all of the festivities that come along with them.  I found this adorable pumpkin mini waffle maker at Sur la table (currently, this exact one is unavailable, but there are a few other options here Search Results | Sur La Table)  Any waffle maker will work, however.  These hearty  waffles, with their warm spice undertones, offer a satisfying breakfast option that will delight any fall loving member of your family.  You can adjust them to your liking by leaving them on the waffle maker longer for a crispier waffle or taking them off soon after they are cooked through for a cakier version.

 

Ingredients

Scale

2 cups flour

3 teaspoons baking powder

2 teaspoons cinnamon

1 teaspoon nutmeg

½ teaspoon cardamom

½ teaspoon ginger

Pinch of salt

2 egg whites

2 tablespoons brown sugar

2 tablespoons maple syrup

1 cup pureed pumpkin

1 ½ cups almond milk (you can use any kind of milk)

½ cup mini chocolate chips

Butter and maple syrup for serving

Instructions

Plug in the waffle maker to let it heat up while you mix up the batter.  Combine all of the ingredients in a medium mixing bowl.  Make sure to put a little oil or butter on the waffle maker to help the waffles to not stick.  Spoon about 2 tablespoons of batter onto the waffle maker and cook the waffles to your liking.  Top with butter and syrup, with a side of fresh fruit and crispy bacon.  Enjoy!
