Warm Apple Simmer Oatmeal
We love oatmeal in our house and this one is perfect for cool fall mornings. It’s satisfying, warm, and makes the house smell amazing. Any type of apples will do for this recipe and we like to leave the skin on, keeping the apples a bit firm while cooking. If your apples are on the smaller size (we get Smitten and Kiku apples frequently, which are tiny!) feel free to cut up a couple of extra to ensure lots of appley goodness. We ended up using four Smitten apples for a recent recipe since they were extra petite. We hope you love this recipe as much as we do and it gets your fall morning off to a great start.
Ingredients
· 2 large apples, diced
· 2 tablespoons unsalted butter (Kerrygold is our favorite)
· ¼ cup brown sugar
· 1 teaspoon cinnamon
· 1/8 teaspoon nutmeg
· Pinch of salt
· 1 teaspoon vanilla extract
· 1/8 cup + 1 ½ cups water
· 1 cup old fashioned oats
· Additional toppings, if desired: chopped walnuts or pecans, raisins, extra cinnamon.
Instructions
Heat a saucepan over medium-high heat and add the butter. Once melted, add the diced apples, brown sugar, cinnamon, nutmeg, salt, 1/8 C water and vanilla. Allow to simmer, stirring occasionally for about 5 minutes. Add in remaining water and oats. Cook for about 5 more minutes until desired consistency is achieved. If you like softer oatmeal, feel free to simmer a bit longer, adding more water if needed. Once cooked to your tastes, ladle into bowls and add toppings, if using.
